Hello! I hope I am understanding correctly - but in order to use the data modification task type you will need to first create a parameter for us to modify. This can be done using the parameters menu here: 
For example, if we want to create a parameter to contain the data for the "Home Score", we can create a param using the "Integer" type and set it's initial (base) value to 0.
Now, when we add a button and select the Data Modification task type, the Home Score parameter will be available for us to select!
Of course, we'd need to make a parameter for each team's score, fouls, etc, but the concept is the same for each. There's also a lot of great information in the Dashboard U videos that will help with panel creation. Hope this helps!

I would like to see what you've built so far to help diagnose the specific issue.
It sounds like you might be missing the actual parameter that you need to utilize. You can add additional parameters by using the large Parameter button at the bottom of the toolbar when you enter Panel Builder Edit Mode.
I'd try taking a look at some Dashboard U videos from our website, as well as the Dashboard User Guide that's included in the Dashboard documentation for more generalized help in your journey through building custom panels.
This is definitely something that tons of people are doing in Dashboard so you're in good company!
