My virtual output window keeps disappearing when I open my Xpression. It seems like it's trying to show up on a monitor that I don't have. When I click on it in the taskbar, it activates but doesn't show up on any of my screens. When I close it, I am unable to call it back up. Any ideas on how to make this window show up after it closes?

Most like as you say it's opening it on a second monitor that you had connected before at some point. Best thing to do is right click on the thumbnail in the taskbar and selection "move" the hold down left arrow until you see the window appear back on your display. If that doesn't work try the right arrow. If you have no luck you may just have to add another monitor again to find it, move it back.
