The Microsoft Surface Pro tablets do a brilliant job of running DashBoard.
We have not had much in terms of issues surrounding touch screen predictability (though you may need to enable application scaling in Windows to get the controls large enough to easily touch).
WiFi stability depends on how strong/reliable the WiFi in your facility is. In terms of bandwidth, there is no issue with connecting to a few devices. If you're connecting to hundreds (or thousands), you might want to stick with a wired connection if possible.
Processing power is where we've run into issues with lower-end tablets. Lower-end tablets we've tried have run DashBoard fairly well and can handle connections to devices. Where they run into trouble is keeping up with screen repainting for panels that have a lot of graphics. Anything Celeron or more powerful does just fine. Our attempt to work with a tablet powered by an Intel Cherry Trail Z8350 1.9GHz CPU left us wanting a little more horsepower.
