There has been quite a bit of development in both Acuity and Ultrix that will likely get the system working the way you want. The option to only show red tally when both tallies are lit is now available for TSL UMD V5 (added in Ultrix v5.6.0), there are more developments in Ultrix tally integration coming in the Ultrix V7.3 release the next few weeks that adds more colour customisation too.
The tally tab in the ultriscape configuration window:

In addition to this there is the 'slot tally' option in the Acuity which lets you define exactly which bits in the tally messages (left red , left green, right red, right green, text red, text green) are triggered by which ME's PGM/PVW buses or Aux's.
If you want to make it so that you see red and green PGM/PVW normally except where a pip has both, and in that case it just shows red, then that option in the ultriscape configuration is the solution.
If you want to disable all green tally then the 'slot tally' mode in the Acuity is the solution as you can simply tell it to trigger 'left red' and 'right red' tally bits when the source is on PGM and set nothing to trigger anything else.

Apologies for the delay. I've looked into this and can see the same behaviour. Those "both tallies on" controls are only for TSL UMD V3.1.
TSL UMD V5.0 commands are displayed directly as instructed.
I've submitted it as a bug/feature request and there is some development underway on the Acuity tally output that may help in future.
I've sent you a direct message with my email and we can arrange to talk about possible workarounds for you in the meantime.
