Is there somewhere an explanation to be found on all the options one could apply to the different DataLinq fields?

There are single quotes, smaler than signs, greater than signs, dollar signs, at signs, percentage signs (any more?).

But as far as I know (and yes, I've searched the helpfile) there is nowhere to be found how and when to use those :-)...

I'm not sure if there is official documentation, I'd need to ask the product team or they may answer here.
