Hi Sam,
On the Control Panel with the mini Menu can you navigate to the Diagnostics menu -- Press the MENU Button - System - NEXT - NEXT - Diagnostic Tests - Control Tests.
Now on the panel you can turn the knobs to see if the hardware is seeing the knob turns at the low level.
Once you have an idea if it is related to the hardware or if there is some how a software bug related to the controls you are trying to use and that knob then you would want to contact support to trouble shoot it further and open a ticket:

Subject: Ross Carbonite Knobs not working
One of the knobs of the Ross Carbonite Mixer is not working as intended.
I can press down on the knob to enter into the different menus but cannot rotate the knobs to change values, etc. (I can physically rotate the knob but the values/sets do not change)
The rest of the knobs are working well.
Has anyone encountered this issue before?
If so any solutions/fixes I can try to rectify the issue?
