    Is there a way to set which network adapter is used when adding a Ross Talk GPI "board?"

    Not explicitly... 

    For incoming RossTalk messages it will accept messages from all adapters and for outgoing messages the destination IP address you put into XPression would set which adapter is used. Ex. A 192.168 destination address will be sent to the adapter with a 192.168 address. If you had two adapters that were both 192.168, then the Windows network adapter "Automatic Metric" or "Interface Metric" feature would decide which adapter the RossTalk messages used.
