I was able to get it working. My issue was that I wasn't being patient enough. I thought once the login screen and IP appeared in VBox that it was ready for Dashboard to connect, but I needed to wait a few more minutes for the switcher backend to load. I imagine this timing will be different for everyone ...

The Carb Ultra sim was recently released, but when I run it, it asks for a user/pass. The announcement didn't mention it. Can someone post it?
